100 g of Tritordeum flour
1 egg M or L
A pinch of salt
Take a bowl. Add the Tritordeum flour, the egg, a pinch of salt and mix until you get uniform dough. Knead well on a counter and let stand 30 minutes with a cloth or plastic wrap on top.
WITH MACHINE FOR FRESH PASTA: Cut the dough into small pieces and begin to pass through the machine at its widest thickness. Repeat with several passes and then fine tune with an increasingly narrow thickness. If necessary, sprinkle the flour.
WITHOUT MACHINE FOR FRESH PASTA: Cut the dough into small pieces and start to flatten, helping with a kitchen roll. Repeat several times until the desired thickness is achieved (1 or 2 cm approx.). If necessary, sprinkle the flour.
Sprinkle with Tritordeum flour and let stand. After, cut to taste.
