Tritordeum brings together the RELIABILITY OF A CULTIVATED CEREAL and the DIVERSITY OF A WILD RELATIVE to create a crop with its own identity.

It is related to wheat, but is distinct from common bread wheat, durum wheat, barley and triticale. Tritordeum was developed through conventional breeding, chromosome stabilisation and long-term selection.

In the case of Tritordeum, those enzymes allow to reduce complex carbohydrates into simple sugars.
