Crisp, no-knead chive & sesame crackers made with Tritordeum flour for a naturally golden color and delicate aroma. Just mix, roll to 2 mm, and bake until snappy. Perfect on their own or alongside cheeses, dips, and charcuterie; they keep well in an airtight container for up to a week.

Ingredients

200 g Tritordeum flour (25 g wholegrain, 175 g white)

45 ml extra-virgin olive oil

90 ml milk (you may need a touch more)

3 g fine salt

1.5 g baking soda

9 g baker’s yeast (instant or fresh, see note)

15 g dried chives

10 g toasted sesame seeds

Instructions

Mixer option: Add all ingredients to the bowl and mix just until combined. By hand: Whisk together dry ingredients (flours, salt, baking soda, yeast, chives, sesame). Add the oil and most of the milk; stir to form a soft dough. If it feels dry, add milk a teaspoon at a time.

Shape into a smooth ball (no kneading).

Rest covered for 30 minutes.

Roll the dough between two sheets of baking paper to 2 mm thickness.

Cut into squares (4×4 cm or 5×5 cm).

Dock with a fork to prevent puffing.

Bake at 180 °C / 356 °F for 15–18 minutes until golden. For extra crispness, finish with 2 minutes on fan/convection.

Tips for Bakers

Use different cookie cutters for playful shapes.

Gather trim pieces, wrap, and let them relax 5–10 minutes before re-rolling if the dough resists.

You can swap in other flours (spelt, whole-wheat). Reduce or increase milk to keep a soft, rollable dough—always start with less liquid and add gradually.

For a vegan version, use plant milk.

Keep in an airtight container up to 1 week. Re-crisp in the oven at 160 °C / 320 °F for 5–7 minutes.

Yeast: The recipe uses baker’s yeast for a light, slightly aerated bite. If you prefer a pure “cracker snap,” you can omit yeast and increase baking soda to 2–2.5 g; texture will be crisper and flatter.

Why Tritordeum? This cereal’s naturally higher lutein content lends the crackers a warm golden color and mild, pleasant aroma—ideal for simple, clean-label snacks.
