Ingredients

(for 20-25 cookies)

250 g Tritordeum flour

100 g brown sugar

50 g white sugar

125 g butter (room temperature)

1 egg

½ teaspoon salt

½ teaspoon baking soda

1 teaspoon vanilla extract (optional)

100 g roasted, chopped hazelnuts

50 g dark chocolate chips or chunks (optional)

Instructions

Prepare the dough:
In a bowl, beat the butter with the sugars until creamy.
Add the egg and vanilla extract, mixing until fully combined.

Add dry ingredients:
Sift together the Tritordeum flour, salt, and baking soda.
Gradually add to the butter mixture.
Mix by hand or with a spatula until a smooth dough forms.

Add hazelnuts and chocolate:
Fold in the chopped hazelnuts and chocolate (if using).
Mix well to evenly distribute.

Shape the cookies:
Preheat the oven to 180°C (356°F).
Shape small balls of dough (walnut-sized) and place them on a parchment-lined baking sheet.
Slightly flatten each ball with your palm or a fork.

Bake:
Bake for 12–15 minutes, or until the edges are golden brown.
Remove from the oven and cool on a wire rack for crispiness.
